Our Story
Bread that takes
as long as it needs
Lagano Cafe began with a simple conviction: that good bread cannot be rushed. We wake before dawn to mix, fold, and shape each batch by hand — no shortcuts, no industrial accelerants, no compromises on time or ingredient.
Our sourdough starters are older than most recipes. Our butter is European-style. Our coffee is roasted locally and brewed to order. Everything on these shelves arrived here because we chose to make it, not because a factory told us to.
We are proud to be part of the Eastlake community — a neighborhood bakery where regulars know our names and we know how they take their coffee.
Our Craft
The details are
not afterthoughts
Long Fermentation
Every loaf rests for a minimum of 48 hours. This develops flavor, creates an open crumb, and makes the bread easier to digest — naturally, without additives.
Simple Ingredients
Flour, water, salt, and starter. That is the foundation. For pastries, we add European butter, free-range eggs, and real vanilla. Nothing we cannot pronounce.
Baked to Order
We bake three times a day — early morning, midday, and late afternoon. What you see on the shelf today was made today. When it is gone, it is gone.
Coffee with Care
We source from local roasters who share our patience. Every cup is pulled to order, every pour is intentional. Espresso, pour-over, or cold brew — all made properly.
